Mini Pies

Sorry guys, I made these a long time ago and am just getting around to posting them now. It's been so long though that I don't even know what recipe I used. But I can tell you that they are super easy!

All you have to do is make a normal, basic pie crust recipe. Roll out the crust and cut circles from it. Spray (or use baking cups) a cupcake pan and line each cup of the pan with a circle of pie crust dough. 

Mine are apple pies. To make with apples, first toss apples with a tablespoon of melted butter and as much cinnamon sugar as you want. Then each cupcake cup with apples. Cut strips from the pie crust and lay them across the top.

Bake for about 20 min. at 350 degrees.

5 Step Blueberry Cream Cheese Bread



You will need:
1/2 cup of blueberries
4 oz. cream cheese
Your favorite bread recipe.
Mine can be found a few posts down.

Step 1: Make your favorite bread recipe. When the dough is done, you don't have to wait for it to rise- that part will come later.

Step 2: Roll out your dough in a rectangle. It doesn't matter how big or small.

Step 3: Spread cream cheese all over the dough and sprinkle blueberries on top.

Step 4: Roll up the dough (like making cinnamon rolls) and cut into slices. Place the slices into your bread pan. Cover and let rise for as long as your bread recipe calls for (mine is an hour).

Step 5: Bake at 350 degrees for about 20 minutes or until top is browned. When done, sprinkle with powdered sugar.

Budget Friendly Meals: Chicken Cheese Ravioli


1. Follow the directions for the dough from the above link.

 2. Cook your chicken and while it is STILL HOT, put it in the kitchen aid with the paddle attachment to shred it. 

 3. Grate your cheese.

 4. get out pepper and oregano.

 5. For each ravioli, put a pinch of garlic and oregano and a little bit of chicken and cheese. Go easy on the ingredients because if they are too full, they will not close or will burst open when you cook them.

6. Fold each ravioli in half and press with a fork. Boil for approx. 5 minutes before eating.

Pinterest Garlic Knots and Pepperoni Bites

The other day I decided to give a couple of my pinterest recipes a whirl and I would just like to say that the results were scrumptious.

First were these garlic knots. I used my standard dough recipe. Here it is for you for the bajillionth time:

1 tbsp. yeast
1/4 cup sugar
1 cup water
2 1/2 cups of flour
1 tbsp oil
1/4 tsp. salt


Put yeast and sugar in bowl. Add water and stir with spoon. let sit for 10 minutes as yeast activates. Add flour, oil, and salt. Mix for 6 minutes on speed 1 on your kitchen aid. Let rise for 45 min.- 1 hour. 


 After the dough is done rising, roll out "snakes" one foot long and tie them in a knot.

 Top with butter, garlic, oregano, and parmesan cheese. Bake on 350 until they start to brown. yum!


Next up are the pizza bites. Use the same dough recipe as above. Roll out 3-4 inch circles. In the middle of your circle put a slice of pepperoni, a thick slice of cheese, and another pepperoni. Pinch up the sides over the toppings. Sorry I don't have pictures of this whole process. It's really easy- I promise!  

DON'T PUT SAUCE IN THESE- It will turn into a fat mess. You can dip them in a dipping sauce when they are finished cooking.

Bake at 350 until golden brown. Brush tops with garlic butter and oregano.

Budget Friendly Meals- Spinach Cheese Rolls

You will need:
your favorite dough recipe
grated cheese of your choice
fresh spinach
1 chicken breast
cream cheese
green onion
garlic powder
pepper


Preheat your oven to 350 degrees. 
Make your favorite dough. I found a lot of recipes for this that used Pepperidge Farm Puff Pasty if you want to take the easy way out on this.

 Cook 1 chicken breast. When it is done, mix it in your kitchen aid with the paddle attachment and it will shred the chicken for you!!

 Roll out your dough in a long rectangular shape.

 Spread cream cheese on dough and add all toppings (Chopped green onion and spinach, grated cheese, and shredded chicken.) sprinkle with garlic and pepper.

Roll it up.

 Cut into slices and place on baking sheet.

 Bake for approx. 10 minutes.

Enjoy! Recipe make 3 dozen.

Homemade Cream Puffs

recipe:

1 cup flour
1/4 tsp. salt
1/2 cup butter
1 cup boiling water
4 eggs

-Sift flour with salt
-In saucepan, boil water. Then on low heat, add butter until melted.
-Add flour mixture, stirring until it forms a ball and leaves sides of pan.
-Remove from heat.
-Add unbeaten eggs one at a time, beating well.

On cookie sheet, drop tablespoon sized balls 2 inches apart. Bake for approx. 15 minutes at 425 degrees and another 10 at 375 degrees. 

When cool, slice in half.

Fill with vanilla pudding. Or whipped cream.

Put back together.

Yum!
