Budget Friendly Meals- Spinach Cheese Rolls

You will need:
your favorite dough recipe
grated cheese of your choice
fresh spinach
1 chicken breast
cream cheese
green onion
garlic powder
pepper


Preheat your oven to 350 degrees. 
Make your favorite dough. I found a lot of recipes for this that used Pepperidge Farm Puff Pasty if you want to take the easy way out on this.

 Cook 1 chicken breast. When it is done, mix it in your kitchen aid with the paddle attachment and it will shred the chicken for you!!

 Roll out your dough in a long rectangular shape.

 Spread cream cheese on dough and add all toppings (Chopped green onion and spinach, grated cheese, and shredded chicken.) sprinkle with garlic and pepper.

Roll it up.

 Cut into slices and place on baking sheet.

 Bake for approx. 10 minutes.

Enjoy! Recipe make 3 dozen.

Homemade Cream Puffs

recipe:

1 cup flour
1/4 tsp. salt
1/2 cup butter
1 cup boiling water
4 eggs

-Sift flour with salt
-In saucepan, boil water. Then on low heat, add butter until melted.
-Add flour mixture, stirring until it forms a ball and leaves sides of pan.
-Remove from heat.
-Add unbeaten eggs one at a time, beating well.

On cookie sheet, drop tablespoon sized balls 2 inches apart. Bake for approx. 15 minutes at 425 degrees and another 10 at 375 degrees. 

When cool, slice in half.

Fill with vanilla pudding. Or whipped cream.

Put back together.

Yum!

Trying New Things

Growing up, I hated trying new foods. If it had anything green or oddly textured or smelled like something I had never had before, I didn't want to have any part in it. I would have been perfectly happy with a bowl of spaghetti for dinner every night, but I guess old people have more "sophisticated" tastes and like variety in their diets.

Alas, I have become one of those old people. I find as I grow older, I start developing tastes for things like tomatoes and onions. I started liking salads and chicken parmigiana and things "sophisticated" old people like.

This last week the husband and I were talking and decided to branch out from our normal pepperoni pizza and try some now types of pizza. This week we made BBQ chicken pizza. Here is our recipe:

You will need:
Pizza crust
BBQ sauce
Cheese
tomato
red onion
cilantro
chicken

1. Start by baking your favorite pizza crust recipe.

2. When it is ready to cook, dust your pizza pan with cornmeal. All good pizzas have cornmeal on the bottom.


3. Roll out your dough in a circular shape (or square if you wish) and spread your BBQ sauce all over it.

4. Chop up some red onion and slice up a tomato and pick the leaves off your cilantro. Cook your chicken.

5. Top your pizza with all your ingredients.

Bake and enjoy!

As my husband and I were sitting there eating our delicious pizza, we were talking about how as kids this would have been totally disgusting. It has funny little green and red and purple things all over it. Gross.

The Post with no Pictures

You may not even get to reading this sentence. After all, who wants to read a blog with no pictures? I know people who blog without pictures and I NEVER read their blogs. Whats the fun in looking at pages and pages of words? We want visuals. Seriously, it will help your pageviews. We don't just want to read about what is going on in you life, we want to see it. 

Anyway, yesterday was one of the best days ever. My husband and I BOTH had the day off. which is very rare. very, very rare. So we woke up and we went to the farmers market and visited the new pioneer village at north park in Provo. (plug: It was free and AWESOME, great place to take the kids. fun and relaxing and cool.) we tried out hand at barbecuing which neither of us knew how to do very well. We had smoked hot dogs. luke warm. We went to the park and flew kites and attracted the attention of all the 2 year olds in the park who were the proper age for kite flying. 

We got to spend the whole day together, just the two of us. no work, no school, no meetings, no errands to run, nothing. It was the best day ever. the end.
